In his opening remarks, chairman Thor Sigfusson noted the importance of collaboration in the 100% Fish movement
And through the two days of Fish Waste for Profit, the community and impact of this movement was apparent.
He praised those that were instrumental in the early days of fish side-streams for products such as collagen and enzymes and how their work has led to the continued development in the area.
‘We are still in a black hole’, he said, noting the role of those in the room to spread the importance of developing the processes that reduce fish waste, or create usable side-streams.
He also referenced the importance of nurturing the 100% Fish movement as ‘an ongoing journey’.
